Cap Management is one of the most important decisions a winemaker makes during fermentation and there are three main purposes for doing so during fermentation:
1) Provide an aerobic environment for efficient fermentations.
2) Help with color stabilization.
3) To keep the cap an even temperature and skin contact for controlled tannin extraction and structure.
Either by increasing the frequency of attention or stopping and press off, this practice allows the winemaker to monitor the progress of extraction and a healthy fermentation.
Flextank Stacker Tanks are a natural for fermentation and, whether you punch down or pump over, you can management your cap with confidence.
These 'do everything' tanks have many features which aid in cap management including:
1) An upper racking port: allows the winemaker to avoid solids and have a clean and efficient pump over that will break up the cap quickly.
2) A lower port which can aid in micro-delestage when used to drain the juice into a small sump, through a screen for seed removal and then a return to the top of the tank.
3) A signature Flextank large 19” Dexter opening to give you full control over the cap.
The answer is truly the end game. Whether your goal is a wine that is big and bold, soft and light, true to varietal or AVA- winemakers around the world know this all is achievable with the Flextank system of winemaking.
