August 6th - Red Wine Protocols

Join us for a talk on protocols, products and timing of additions for making different styles of red wines, from grape to through fermentation. We will look at cold soak, non-Saccharomyces for bio-protection, fermentation tannins, enzymes, yeast selection, and fermentation nutrition. POWERLEES® ROUGE, our new mouthfeel enhancing product, will be a introduced. This is an excellent presentation to get you ready for harvest and re-fresh all the details that are easily forgotten throughout the year.

August 13th - White & Rosé Protocols

Join us for a talk on techniques, products and protocols for making aromatic white wines and rosé wines, from grape through fermentation. We will look at pressing techniques to reduce phenolic extraction, juice fining, stabulation, yeast selection, fermentation nutrition and aroma protection with glutathione. NUTRISTART® AROM, our newest mid-fermentation nutrient for enhancing the thiol and ester aromatic profile, will be discussed. This is an excellent presentation to get you ready for harvest and re-fresh all the details that are easily forgotten throughout the year.

August 27th - Malolactic Fermentation
