The Cazaux Aerosmooth pump is an innovative step forward in cap management and homogenization during fermentation: not a punch-down, not a pump-over but a true and gentle homogenization between liquid and solid phase. The Aerosmooth pump is for winemakers who want a gentle mix between berries and juice in a short time with great control over the winemaking. In addition to quickly breaking the cap and allowing a very effective homogenization, its usefulness is based on its ease of cleaning, ease of use, safety in labor and its speed of action. Aerosmooth pump works on recycling gas to homogenize a tank; it can be CO2 from the top of the ferment or oxygen from the atmosphere.

“We have 18 large tanks we do pump-overs on, normally we have 2-3 guys working 5-6 pump-over devices and it would take us roughly about three to four hours to hit all those tanks.
